Spice up your holiday Turkey with this special brine we in the Zurn household like to use around the holidays!
This recipe makes 18 servings and takes 30 minutes to fully complete.
3 cups of apple juice or apple cider
2 gallons of cold water
4 tablespoons of fresh rosemary leaves
5 cloves of minced garlic
1-1/2 cups of kosher salt
2 cups of brown sugar
3 tablespoons of peppercorns
5 whole bay leaves
peel of 3 large oranges
Cooking Directions:
Place all ingredients in a large pot and stir until salt and sugar dissolve.
Bring contents to a boil, then turn off heat and cover.
Allow the pot to cool completely, then pour contents into a large brining bag or pot.
Place uncooked turkey in brine solution, and refrigerate for 16 to 24 hours.
When ready to roast the turkey, remove it from the brine and submerge turkey in a pot or sink of fresh, cold water. Let the turkey sit in clean water for 15 minutes to remove excess salt from the outside.
Discard the brine and remove turkey from the clean water. Pat dry and cook as you normally would.
